Prepare the stuffing: In a large bowl, mix the ground meat, raw eggs, grated carrot, pepper, gluten-free breadcrumbs, raisins, ketchup and soy sauce. Season with salt and pepper. Mix until you obtain a homogeneous preparation.

Shape the Embutido: Spread a large sheet of aluminum foil on your work surface. Place a portion of the stuffing in the center and flatten it into a rectangle about 1 cm thick. Place the ham (or sausage) and hard-boiled eggs in the middle, aligning them along the entire length.

Roll: Using the aluminum foil, roll the stuffing around the eggs to form a sausage. Wrap tightly in foil and seal ends well.

Cooking: Steam option: Steam the rolls for 1 hour. Oven option: Place the embutido in a baking dish and bake at 180°C for 40 to 50 minutes.

Finishing (optional): Once cooked, unwrap the Embutido and lightly brown it in the pan for a nice color.

Let cool slightly before cutting into thick slices. Arrange the pieces on a serving dish and accompany them with white rice or a salad.
