Prepare the filling: In a large bowl, combine the ground meat, raw eggs, grated carrot, bell pepper, gluten-free breadcrumbs, raisins, ketchup, and soy sauce. Season with salt and pepper. Mix well until thoroughly combined.

To shape the Embutido: Lay a large sheet of aluminum foil on your work surface. Place a portion of the filling in the center and flatten it into a rectangle about 1 cm thick. Place the ham (or sausage) and hard-boiled eggs in the middle, lining them up along the entire length.

Rolling: Using the aluminum foil, roll the stuffing around the eggs to form a sausage shape. Wrap tightly in the aluminum foil and seal the ends well.

Cooking: Steaming option: Steam the rolls for 1 hour. Oven option: Place the embutido in an ovenproof dish and bake at 180°C for 40 to 50 minutes.

Finishing (optional): Once cooked, unwrap the Embutido and lightly brown it in a pan for a nice color.

Allow to cool slightly before slicing into thick pieces. Arrange the pieces on a serving platter and serve with white rice or a salad.
