  1. 1- Heat the oil in a frying pan and fry the onions until golden brown.
  2. 2- Add the garlic, ginger, cinnamon, cloves, cardamom and bay leaf. Let it toast for 1 minute.
  3. 3- Incorporate the paprika, chili, cumin, coriander and turmeric. Mix quickly.
  4. 4- Add the pieces of lamb and sear them on all sides.
  5. 5- Reduce the heat, add the yogurt while stirring to prevent it from curdling.
  6. 6- Pour in the water or stock, cover and simmer for 1 to 1.5 hours over low heat until the meat is tender.
