  1. Step 1: Preparing the chicken

    In a frying pan, heat the oil over medium heat. Fry the chicken pieces until they are golden brown on all sides. Remove and set aside.

    • In the same pan, sauté the onion and garlic until translucent and fragrant.
    • Add the pineapple juice, gluten-free soy sauce, sugar, and rice vinegar to the pan. Mix well to combine the flavors.

    Return the chicken pieces to the pan. Reduce the heat, cover, and simmer for 25 to 30 minutes, stirring occasionally. If necessary, add a little water to prevent the sauce from reducing too much.

    • Add the pineapple pieces to the pan and cook for another 10 minutes over low heat so that they absorb the sauce without losing their texture.
