Pop (also called pap or papa in some regions) is a popular staple dish in southern Africa, particularly South Africa, Lesotho, Botswana and Zambia . It is a thick porridge or paste made from corn flour (or ground corn) and water. Depending on the consistency, it can be served as a creamy breakfast porridge or as a denser accompaniment to main dishes.
Pop grilled meats, or vegetables, and plays a role similar to that of fufu in West Africa. Naturally gluten-free, pop is a simple, nourishing food widely consumed across the continent.
