  2. Grill the whole eggplants over a fire or in the oven until the skin is blackened and the flesh is tender. Then peel them and chop the flesh.

  4. Peel and seed the tomatoes, then dice them. In a pan, heat the olive oil, add the minced garlic and sauté for a few minutes. Then add the tomatoes and simmer until they have reduced significantly.
  5. Add the eggplants and spices:
  6. Add the chopped eggplant to the tomatoes, then stir in the cumin, paprika, ground coriander, salt, and pepper. Simmer over low heat for 15 to 20 minutes, stirring occasionally.
