Grill the eggplants:

Grill whole eggplants on the stove or in the oven until the skin is blackened and the flesh is tender. Then peel them and chop the flesh.

Prepare the tomato sauce:

Peel and seed the tomatoes, then cut them into small cubes. In a pan, heat the olive oil, add the minced garlic and sauté for a few minutes. Then add the tomatoes and simmer until well reduced.

Add the eggplants and spices:

Add the chopped eggplant to the tomatoes, then stir in the cumin, paprika, ground coriander, salt and pepper. Simmer over low heat for 15 to 20 minutes, stirring occasionally.

Add the lemon juice:

Remove from the heat, add the lemon juice and garnish with fresh coriander. Serve hot or cold.
