Traditionally prepared with cold white rice from the day before, eggs, vegetables, and sometimes pork, chicken or shrimp, it is quickly sautéed over high heat. This popular dish in Japanese homes is simple, economical and customizable depending on the ingredients available. It usually prepares with soy sauce, but in gluten -free version, just use tamari. Heat the oil in a large skillet or wok.

Brown the onions, carrots, shitake or edamame and meat or shrimp if used.

Add the beaten eggs and quickly blur them.

Add the cold rice by defeating it well so that it does not stick.

Sauté everything over high heat for a few minutes.

Pour the tamari, mix well, then continue cooking until slight coloring.

Serve hot, garnished with chives or sesame seeds.
