  1. Heat the oil in a large skillet or wok.
  2. Brown the onions, carrots, shitake or edamame and meat or shrimp if used.

  3. Add the beaten eggs and quickly blur them.
  4. Add the cold rice by defeating it well so that it does not stick.
  5. Sauté everything over high heat for a few minutes.
  6. Pour the tamari, mix well, then continue cooking until slight coloring.
  7. Serve hot, garnished with chives or sesame seeds.
