  2. Sweat the vegetables: In the same pot, add the onions and garlic, then sauté until translucent. Add the carrots and celery.
  3. Simmering the stew: Return the meat to the pot, add the bouquet garni and cover with the stock. Season with salt and pepper and bring to a boil.
  4. Add the potatoes: After 45 minutes, add the chopped potatoes and simmer over low heat for another hour.
  5. To finish: Remove the bouquet garni, adjust the seasoning and sprinkle with fresh parsley before serving.
