Preparing the turkey: Preheat your oven to 180°C. Rinse the turkey inside and out under cold water, then pat dry with paper towels. Remove the giblets (you can use them for a stock or sauce, if desired).

Seasoning: Mix the butter with the garlic, salt and pepper. Carefully peel the skin off the turkey breast and slide in some of the seasoned butter. Massage the remaining butter all over the exterior surface of the turkey.

Interior Filling: Place onion, celery, carrots, lemon, thyme and bay leaves inside the turkey cavity to flavor the meat while cooking.

Cooking: Place the turkey in a roasting pan with the chicken stock on the bottom to prevent it from drying out. Cover the turkey lightly with foil to prevent the skin from burning too quickly. Bake for about 2 to 3 hours, basting the turkey regularly with its cooking juices.

Finishing: Remove the aluminum foil for the last 30 minutes of cooking so that the skin becomes golden brown and crispy. Check, if you can, the internal temperature of the turkey with a thermometer: it should reach 74°C at the breast and 80°C in the thighs.

Resting and carving: Let the turkey rest for 20 to 30 minutes before carving to allow the juices to distribute well. Serve with a gluten-free sauce, roasted vegetables and your favorite side dish.
