Preparing the turkey: Preheat your oven to 180°C (350°F). Rinse the turkey inside and out under cold water, then pat it dry with paper towels. Remove the giblets (you can use them for stock or gravy, if desired).

Seasoning: Mix the butter with the garlic, salt, and pepper. Gently loosen the skin on the turkey breast and slip some of the seasoned butter under the skin. Massage the remaining butter over the entire outside of the turkey.

Interior stuffing: Place the onion, celery, carrots, lemon, thyme, and bay leaves inside the turkey cavity to flavor the meat while cooking.

Cooking: Place the turkey in a roasting pan with chicken stock at the bottom to prevent it from drying out. Lightly cover the turkey with aluminum foil to prevent the skin from burning too quickly. Roast for approximately 2 to 3 hours, basting the turkey regularly with its cooking juices.
