Thai Green Mango Salad ( or Yam Mamuang in Thai) is a traditional Thai dish that offers a perfect balance of acidity, sweetness, and spice. It's a fresh and flavorful dish that uses crisp, slightly acidic green mangoes dressed with a tangy vinaigrette. It's a light and healthy salad, similar to papaya salad.

  1. Preparing the mangoes: Peel the green mangoes and cut them into julienne strips. The goal is to obtain thin, crisp pieces. Place them in a large salad bowl.
  2. Adding the remaining ingredients: Add the grated carrot, the sliced ​​red onion or shallot, and the finely chopped red chili pepper. Mix gently to distribute the ingredients evenly.
  3. To prepare the dressing: In a small bowl, combine the lime juice, tamari sauce, palm sugar, fish sauce, and grated garlic. Stir until the sugar is dissolved.
  4. Salad dressing: Pour the vinaigrette over the salad and toss gently. Taste and adjust the seasoning if necessary. Adjust the chili pepper to your liking.
  5. Finishing and presentation: Just before serving, sprinkle the crushed roasted peanuts over the salad and garnish with coriander.

Note

It's not easy to find green mangoes, but perhaps you'll manage to find some that aren't yet ripe. Personally, I found some frozen ones at the Asian market.
