  1. To prepare the Suya marinade: In a bowl, mix the ground peanuts, paprika, ginger, garlic powder, chili powder, and salt. Add vegetable oil to form a thick paste. If it's too dry, add a little water to moisten it.
  2. Meat marinade: Coat the meat slices with this spice paste, massaging it in well to ensure each piece is covered. Marinate in the refrigerator for at least 1 hour, or overnight for more intense flavors.
  3. Assembling the skewers: Thread the marinated pieces of meat onto the wooden skewers. Preheat your grill (or a grill pan) to medium-high heat.
  4. Cooking: Grill the skewers for about 8 to 10 minutes, turning them over occasionally, until the meat is cooked through and slightly charred around the edges.
  5. Serving suggestion: Serve the Suya with slices of raw onion, tomato rings, and a squeeze of lemon. They are perfect as an appetizer or as a main course with Jollof rice.

Note

If you prefer a less spicy version, reduce the amount of chili in the marinade. You can also make this recipe with fish for a lighter and equally delicious version.
