Prepare the dried fruit: In a bowl, mix the raisins, cherries, orange zest, and walnuts with the rum or orange juice. Let it macerate for at least 2 hours, ideally overnight.

Prepare the dough: In a large bowl, mix the flours, xanthan gum, baking powder, and spices (cinnamon, nutmeg, cloves). Set aside.

In a separate bowl, beat the butter and brown sugar until creamy. Add the eggs one at a time, then stir in the vanilla extract.

To assemble the cake: Gradually incorporate the flour mixture into the butter-sugar mixture while stirring. Add the soaked dried fruit and gently mix to distribute it evenly.

Cooking: Preheat your oven to 160°C.

Pour the batter into a loaf tin lined with baking paper. Bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean.
