Skoudehkaris can be prepared with lamb, beef, or goat, but I chose to cook it with chicken. This traditional dish combines fragrant rice with spices from the Arabian Peninsula and African influences. It's a family recipe, naturally gluten-free, that is readily shared during convivial meals. It's a simple but flavorful dish where the chicken and spices simmer gently to permeate the rice. This dish is balanced and complete, perfect for a dinner party. Its preparation doesn't require complicated techniques, just a little patience. Discover below the recipe for making Skoudehkaris with chicken like in Djibouti, in a light and modern version.
