Savory red lentil waffles are a simple way to change up your usual toast or pancakes. They're flourless and gluten-free, and made with pantry staples. Red lentils are rich in plant-based protein and give them a soft, moist texture. This recipe is perfect for lunch, dinner, or a quick brunch. Serve them with a salad, an egg, or a dollop of yogurt. They cook in a standard waffle iron or a silicone waffle mold and keep well. You can also customize them with grated vegetables or fresh herbs. The batter takes just minutes to prepare. Then simply cook and enjoy! These waffles are a great option for a balanced, processed-free meal.
Ingredients
Preparation
-
Ideally, soak the red lentils in a bowl of cold water for 2 hours. Drain them. I didn't have time, so I didn't soak them. The waffle was still good.
-
Chop the onion and garlic and combine all the ingredients.
-
Blend the lentils, egg, water, oil, onion, garlic, spices, salt and pepper until you obtain a smooth paste.
-
Preheat the waffle iron and grease the plates. I used a silicone mold.
-
Pour a ladleful of batter and cook for 5 to 6 minutes, until the waffles are golden brown. I left mine in the oven for about fifteen minutes at 180°C (350°F).
-
Serve hot with a salad, dip or vegetables.
