Savory red lentil waffles are a simple alternative to traditional toast or pancakes. They're flour- and gluten-free, and can be made with store-bought ingredients. Red lentils are rich in plant-based protein and provide a soft texture. This recipe is perfect for lunch, dinner, or a quick brunch. Serve them with salad, an egg, or a little yogurt. They can be cooked in a traditional waffle iron or a silicone waffle mold and are easy to store. You can also customize them with grated vegetables or fresh herbs. The batter can be prepared in minutes. Then, simply bake and enjoy. These waffles are a great option for a balanced diet without processed foods.
Ingredients
Preparation
-
Ideally, soak the red lentils in a bowl of cold water for 2 hours. Drain them. I didn't have time, so I didn't soak them. The waffle was still good.
-
Chop the onion, garlic and combine all the ingredients.
-
Blend the lentils, egg, water, oil, onion, garlic, spices, salt and pepper until you get a smooth paste.
-
Preheat the waffle iron and oil the plates. I used a silicone mold.
-
Pour a ladleful of batter and cook for 5 to 6 minutes, until the waffles are golden brown. I left them in the oven for about fifteen minutes at 180°C.
-
Serve hot with salad, dip or vegetables.
