Sausage rougail is one of the most famous dishes from Réunion Island. This delicious recipe combines flavorful Creole sausages with a spicy sauce made from tomatoes, onions, and spices.   1. Step 1: Preparing the Ingredients
  2. Start by washing the tomatoes and then dicing them. Finely slice the onions and crush the garlic cloves. Grate the ginger and, if you like spicy food, chop the green chilies and zest a little kaffir lime. Set all these ingredients aside.
  3. Step 2: Cooking the Sausages
  4. In a large pot, bring water to a boil. Add the sausages and cook for about 10 minutes to remove excess salt and partially cook them. Drain them, then slice them into thick rounds.
  5. Step 3: Preparing the rougail
  6. Heat the oil in a Dutch oven. Add the onions and crushed garlic. Sauté for a few minutes until the onions become translucent. Then add the sausage pieces, followed by the tomatoes, grated ginger, green chilies or Espelette pepper, and the sprig of thyme. Add the kaffir lime zest. Simmer over low heat for 30 to 45 minutes, stirring regularly. Season with salt and pepper to taste.
  7. Your sausage rougail is ready to be enjoyed, served with rice and lentils!
  8. Traditional sausage rougail doesn't contain much sauce, so you usually have to remove the lid while it simmers. But I must admit, I really love this sauce, especially for pouring over rice, so I cook it covered to retain as much as possible. Easy to prepare, sausage rougail will delight fans of Creole cuisine. Serve it with white rice and some legumes for a balanced and traditional meal.
