A red fruit tartlet, gluten-free and lactose-free, that I made when I lived in Chicago. I gathered and combined several recipe ideas and kept what I liked best. Chia seed jam can be made with different fruits: raspberries, mango, passion fruit… frozen or fresh.

  1. To prepare the dough: Mix the flours, baking powder, and sugar. Add the coconut oil, then the beaten eggs. Bake for about fifteen minutes in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit). Once baked, transfer to a wire rack and let cool.
  2. To make the fruit jam: In a saucepan, heat the fruit, then blend or finely crush it. Add 2 tablespoons of honey or agave syrup and 4 tablespoons of chia seeds. Mix and bring to a boil for one minute, then set aside.
  3. Add the toppings: Once the dough has cooled, spread the fruit mixture over the pastry bases and then refrigerate for at least 2 hours.
  4. Serve: with some red berries and enjoy.

  6. You can customize the jam according to your tastes or the fruit you have at home.
  7. This jam can be kept for 2 weeks in the fridge, in a sealed jar.
