Peel the plantains and cut them into large pieces.

In a large saucepan, pour the coconut milk, add the sugar, the split vanilla pod, cinnamon, nutmeg and a pinch of salt.

Bring to a boil, then reduce the heat to a gentle simmer.

Add the plantain pieces to the mixture and cook over low heat for 30 to 40 minutes, until the plantains are tender and the sauce has thickened.

Remove from heat, let cool slightly, then serve warm or at room temperature.
