Pineapple cakes, or Feng Li Su, are small Chinese New Year cakes traditionally served in Taiwan, symbolizing prosperity and good fortune.
These small, crumbly, melt-in-your-mouth pastries have a soft pineapple center, reminiscent of gold ingots. They are square in Taiwan and often round in other countries. In Singapore, they are sold in pretty boxes, making them ideal for gift-giving. Gluten-free versions are also available, perfect for sharing wishes of happiness and success.

  1. 1- Preparing the pineapple filling

    • Blend the pineapple to obtain a coarse puree.
    • Pour this puree into a saucepan with the sugar and lemon juice. Cook over medium heat, stirring regularly, until the mixture thickens (about 15 minutes).
    • Add the cornflour or tapioca starch, mix well, and let cool completely.
  1. 2. Shape the cupcakes

    • Preheat your oven to 180°C and prepare a baking sheet with parchment paper.
    • Using a cookie cutter, divide the dough into small circles approximately 8 cm in diameter.
    • Place a teaspoon of pineapple filling in the center, then gently fold the dough over to form a ball or a small rectangle. Seal the edges by pressing with the tines of a fork.
    • Place the shaped cakes on the tray, making sure to leave some space between them.
  1. 3- Baking the cupcakes

    • Brush each cake with the egg wash (mixture of egg yolk and milk) for a nice finish.
    • Bake for 15 to 20 minutes, or until the cakes are lightly golden.
    • Allow to cool completely before enjoying or giving as a gift.

Note

You can store your pineapple cupcakes in a nice metal box for several days.
