Pineapple cupcakes, or Feng Li Su, are Chinese New Year cupcakes, traditionally served in Taiwan, symbolizing prosperity and good luck.
These little pastries, both crumbly and tender, contain a soft pineapple center, reminiscent of gold bars. They are square in shape in Taiwan and often round in other countries. In Singapore, they are found in pretty boxes that can be given as gifts. Revisited in a gluten-free version, they are perfect for sharing wishes of happiness and success.

  1. 1- Preparation of the pineapple filling
    • Blend the pineapple to obtain a coarse puree.
    • Pour this puree into a saucepan with the sugar and lemon juice. Cook over medium heat, stirring regularly, until the mixture thickens (about 15 minutes).
    • Add the cornstarch or tapioca starch, mix well, and let cool completely.
  1. 2- Shape the cupcakes
    • Preheat your oven to 180°C and prepare a baking tray with baking paper.
    • With a cookie cutter, divide the dough into small circles about 8 cm in diameter.
    • Place a teaspoon of pineapple garnish in the center, then gently close the dough to form a ball or a small rectangle. Sell ​​the edges by pressing with the tip of a fork.
    • Place the shaped cakes on the baking sheet, making sure to leave some space between them.
  1. 3- Cooking cupcakes
    • Brush each cake with the gilding (mixture of egg yolk and milk) for a nice finish.
    • Bake for 15 to 20 minutes, or until the cakes are lightly browned.
    • Allow to cool completely before serving or offering.
