Prepare the filling: In a bowl, combine the chopped dates, crushed walnuts, 1 tablespoon of honey, orange blossom water, and cinnamon. Mix until you have a smooth filling.

Stuff the pears: Fill the cavities of the pears with the stuffing, packing lightly so that they are well filled.

Baking the pears: Preheat the oven to 180°C (350°F). Grease an ovenproof dish with butter or coconut oil. Arrange the stuffed pears in the dish, then drizzle them with 1 tablespoon of honey diluted in a little water (about 2 tablespoons). Cover the dish with aluminum foil and bake for 25 to 30 minutes, until the pears are tender but still hold their shape.
