Preparing and enjoying them is a joyful way to start the year with wishes of health and happiness for all. Traditionally, they are made with wheat noodles, but to make them gluten-free, you can use buckwheat noodles, sweet potato noodles, or even thin, gluten-free spaghetti.

Preparation

  1. 1. Prepare the noodles

    • Cook the noodles according to the package instructions. Be careful not to break them to preserve their symbolic value of longevity. Drain them gently and rinse them with cold water to stop the cooking process.
    • Add a tablespoon of vegetable oil to prevent them from sticking, then set aside.
  1. 2. Prepare the vegetables and the sauce

    • Mix together the tamari sauce, sesame oil, rice vinegar, sugar and white pepper in a bowl. Set aside.
    • Heat a large frying pan or wok over medium heat with a tablespoon of vegetable oil.
    • Add the garlic and ginger, then sauté until fragrant.
    • Add the carrots, zucchini, peppers, and mushrooms. Sauté the vegetables for 3 to 4 minutes so they remain crisp.
    • Add the mung bean sprouts (if used) and mix quickly.
  1. 3- Mix the noodles and vegetables

    • Add the cooked noodles to the pan with the vegetables.
    • Pour the prepared sauce over the noodles and mix gently to coat them well without breaking them.
    • Let it cook for another 2 to 3 minutes.
    • Arrange the gluten-free longevity noodles on a plate or large serving platter. Garnish with finely chopped green onions. Serve immediately.
