Lo Lei, also known as prosperity salad, is a traditional Chinese dish served during festivals in Singapore. Discover how to make this gluten-free version for a fun and symbolic meal. Rich in color, flavor, and symbolism, this salad represents prosperity, good fortune, and harmony. We had the opportunity to participate in these festivities and enjoy this meal several times during our stay in Singapore, and we have wonderful memories of them. In this salad, each ingredient has a special meaning, and the ritual of collectively tossing the ingredients with chopsticks symbolizes the wish for a bountiful year for everyone.

  1. 1- Prepare the raw vegetables and the fish

    • Grate or julienne all the vegetables to achieve a crisp, even texture. Arrange each ingredient separately on a large round platter for a spectacular visual effect.
    • If using raw fish, ensure it is sashimi quality or use gravlax or smoked salmon. Arrange the slices in the center of the dish.
  1. 2. Prepare the sauce

    In a bowl, mix all the sauce ingredients until smooth. Taste and adjust the sweetness or acidity to your liking. Set aside.

  1. 3. Add the toppings

    Sprinkle toasted sesame seeds, peanuts (or cashews) and lime zest over the vegetables and fish.

  1. 4- The mixing ritual (Lo Hei)

    • Pour the sauce evenly over the salad.
    • Invite everyone to take out chopsticks. Together, toss the salad, raising the ingredients as high as possible, while making wishes for prosperity and good fortune. The higher the salad is tossed, the greater the luck is believed to be!
