Cooking the vegetables: Add the carrot, courgette and pepper and sauté for 5 minutes.

Cooking the rice: Add the rice and stir to coat it well with oil. Pour in the vegetable stock, turmeric, and cumin. Season with salt and pepper.

Simmering: Cover and cook over low heat for about 15-20 minutes, or until the rice is tender and the broth is completely absorbed.
