  1. Preparing the vegetables: In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
  2. Cooking the vegetables: Add the carrot, courgette and pepper and sauté for 5 minutes.
  3. Cooking the rice: Add the rice and stir to coat it well with oil. Pour in the vegetable stock, turmeric, and cumin. Season with salt and pepper.
  4. Simmering: Cover and cook over low heat for about 15-20 minutes, or until the rice is tender and the broth is completely absorbed.
  5. Serving: Fluff the rice with a fork before serving it hot.
