Prepare the marinade: In a bowl, mix the gluten-free soy sauce, sugar, sesame oil, garlic, grated pear, sesame seeds, mirin (if used), and a pinch of black pepper.

Marinate the beef: Add the thin slices of beef to the marinade and let it marinate for at least 1 hour (ideally 3-4 hours) in the refrigerator so that the meat absorbs the flavors well.

Cooking: Heat a pan or grill over high heat. Sauté the onions in a little oil, then add the marinated beef in small portions, cooking them quickly until they are well browned but still tender.
