Prepare the vegetables: In a large saucepan or high skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Adding the tomatoes: Add the diced tomatoes, paprika and oregano. Cook for about 5 minutes until the tomatoes begin to release their juices.

Cooking the green beans: Add the green beans and vegetable stock. Mix well, cover and simmer over low heat for 20-25 minutes, or until the beans are tender.

Seasoning: Add salt and pepper to your preference.
