Japanese cuisine is renowned for its ability to enhance simple ingredients with refined techniques and well-balanced flavors. Among these traditional dishes, we find “Ingen no goma-ae” , or green beans in sesame sauce. Prepare the green beans:

Wash and hull the green beans (or use frozen beans).

Blanch them in boiling salted water for about 2-3 minutes until they are tender but still crunchy.

Drain and immediately run under cold water to stop the cooking and preserve their green color. Drain again.

Prepare the sesame sauce (Goma-ae):

Lightly toast the sesame seeds in a dry pan until golden and fragrant.

Then crush them in a mortar or pestle to release the aromas.

Add the soy sauce, sugar and mirin (if using), then mix until you have a smooth paste.

Assemble the dish:

Toss the green beans with the sesame sauce until well coated.

Serve immediately, or let cool to room temperature.

Suggestions: You can also add a little touch of rice vinegar for a little more acidity. This dish can be served as a side dish
