  1. Prepare the green beans:
  2. Wash and trim the green beans (or use frozen beans).
  3. Blanch them in boiling salted water for about 2-3 minutes until they are tender but still crisp.
  4. Drain and immediately rinse under cold water to stop the cooking process and preserve their green color. Drain again.
  5. Prepare the sesame sauce (Goma-ae):
  6. Lightly toast the sesame seeds in a dry pan until golden brown and fragrant.
  7. Then crush them in a mortar or with a pestle to release the aromas.
  8. Add the soy sauce, sugar and mirin (if using), then mix until you have a smooth paste.
  9. Assemble the dish:
  10. Mix the green beans with the sesame sauce until they are well coated.
  11. Serve immediately, or allow to cool to room temperature.
  12. Suggestions: You can also add a touch of rice vinegar for a bit more acidity. This dish can be served as a side dish
