Greek salad, also called Horiatiki , is a staple of Mediterranean cuisine. Fresh, light, and full of flavor, this salad is perfect as a side dish or as a main course during the summer. Made with simple, wholesome ingredients, it represents the very essence of Greek cooking. I personally substituted grilled halloumi for the feta. Halloumi is a Cypriot cheese that is grilled.

Prepare the vegetables: Wash the tomatoes, cucumber, and bell pepper thoroughly. Cut the tomatoes into wedges, the cucumber into slices, and the bell pepper into thin strips. Thinly slice the red onion.

To assemble the salad: In a large salad bowl, mix the tomatoes, cucumber, pepper and onion slices.

Add the olives and feta: Add the whole Kalamata olives (or pitted if you prefer). Roughly crumble the feta cheese over the top. I chose to grill slices of halloumi.

Dressing: Drizzle the salad generously with extra virgin olive oil and vinegar. Sprinkle with dried oregano, then add salt and pepper to taste.

To serve: Gently mix all the ingredients to evenly distribute the flavors. Serve immediately.

This traditional Greek salad is not only quick to make but also delicious. Ideal for hot days, it brings freshness and authenticity to your table. We ate it almost every day when we were in Greece.
