Greek salad, also called Horiatiki , is a staple of Mediterranean cuisine. Fresh, light and rich in flavor, this salad is perfect to accompany your meals or to be served as a main course during the summer. Composed of simple and healthy ingredients, it represents the very essence of Greek cuisine. For my part, I replaced the feta with grilled halloumi. Halloumi is a Cyprus cheese that is grilled.

Preparation
-
Prepare the vegetables: Wash the tomatoes, cucumber and pepper well. Cut the tomatoes into quarters, the cucumber into slices, and the pepper into thin strips. Slice the red onion into thin slices.
-
Assemble the salad: In a large salad bowl, combine the tomatoes, cucumber, pepper and onion slices.
-
Add the olives and feta: Add the whole Kalamata olives (or pitted if you prefer). Coarsely crumble the feta cheese on top. I chose to grill slices of halloumi.
-
Season: Generously sprinkle the salad with the extra virgin olive oil and vinegar. Sprinkle with dried oregano, then add salt and pepper to taste.
-
Serve: Gently mix all the ingredients to evenly distribute the flavors. Serve immediately.

This traditional Greek salad is not only quick to make but also delicious. Ideal for hot days, it brings freshness and authenticity to your table. We ate it almost every day when we were in Greece.
