A soft and fragrant cake for a gourmet Japanese touch
We have kept very good friends from Chicago: an American-Japanese couple who came to visit us in France and which my husband sees regularly when he moves professionally in Chicago. At each meeting we used to exchange small gifts, generally food, from our countries. This time, Haruka brought me a jar of Yuzu jam, a Japanese citrus with tangy and floral notes and offered me a cake recipe to use it. This recipe is very easy to make with gluten -free flour and remains melting in the mouth. The yuzu, a flagship ingredient of Japanese cuisine, gives this cake a unique freshness , between tangerine and grapefruit. 100% gluten-free and naturally scented recipe , for a gourmet break from Japan!

Preheat the oven to 180 degrees C.

Mix the soft butter and sugar until you get a cream.

Add the yuzu jam and mix.

Add the beaten eggs one by one.

Add the dry ingredients (flour, sugar and yeast) and mix well.

Transfer to a small silicone or buttered and floured cake pan.

Bake for 30 minutes.
