A soft and fragrant cake for a delicious Japanese touch
We've kept in touch with some very good friends from Chicago: an American-Japanese couple who came to visit us in France and whom my husband sees regularly when he travels to Chicago for work. At each meeting, we've made a habit of exchanging small gifts, usually food, from our respective countries. This time, Haruka brought me a jar of yuzu jam, made from a Japanese citrus fruit with tangy and floral notes, and shared a cake recipe to use it in. This recipe is very easy to make with gluten-free flour and remains melt-in-your-mouth delicious. Yuzu, a key ingredient in Japanese cuisine, gives this cake a unique freshness , somewhere between mandarin and grapefruit. A 100% gluten-free and naturally fragrant for a delicious treat inspired by Japan!

Preheat the oven to 180 degrees C.

Mix the softened butter and sugar until you obtain a cream.

Add the yuzu jam and mix.

Add the beaten eggs one by one.

Add the dry ingredients (flour, sugar and yeast) and mix well.

Transfer to a small silicone or greased and floured cake tin.

Bake for 30 minutes.
