  1. 1- Preparation of the caramelized sauce

    • Peel and dice the apples.
    • Fry them with the onion in a pan with a spoonful of olive oil.
    • Add the nuts, cinnamon, honey, a pinch of salt, and let it caramelize lightly. Set aside.
  1. 2- Cooking the dish

    • Heat a spoonful of oil in a casserole dish and brown the tenderloin on all sides.
    • Add the caramelized sauce to the apples.
    • Add the stock, cover and simmer for 25-30 minutes over low heat, turning the meat occasionally.
