Mix the ground flax seeds with the water. Let it sit for 10 minutes (it will thicken).

Blend the oat flakes until you obtain a flour.

Dissolve the yeast in lukewarm water.

Mix together the oat flakes, water and yeast, oil and flaxseed mixture and form a soft ball.

Let it rest for 10 minutes.

Spread the dough on a sheet of baking paper.

Pre-bake it for 10 minutes at 200°C.

Add your toppings, then bake for 10 to 15 minutes. I used tomato sauce, goat cheese, Cancoillotte cheese, fish, a few cherry tomatoes, some mozzarella, and grated Gruyère. After baking, I added Parma ham and arugula, but anything goes. It was delicious, but the crust is very filling; I couldn't finish it... Enjoy!
