Mix the ground flax seeds with the water. Let stand for 10 minutes (it will thicken).

Blend the oat flakes until they form a flour.

Dissolve the yeast in lukewarm water.

Mix the oat flakes, water and yeast, oil and flaxseed mixture and form a soft ball.

Let stand for 10 minutes.

Roll out the dough on a sheet of baking paper.

Pre-cook it for 10 minutes at 200°C.

Add your toppings, then bake for 10 to 15 minutes. I added tomato sauce, goat cheese, cancoillotte, fish, a few cherry tomatoes, a little mozzarella and grated Gruyère cheese. After baking, I added Parma ham and arugula, but anything goes. A delight, but this dough is so filling, I couldn't finish it... Enjoy!
