Gingerbread , with its warm aromas of cinnamon and ginger, is an essential Saint Nicholas treat. Traditionally enjoyed in Europe, it is perfect as a snack. This gluten-free version, made with rice or buckwheat flour, retains all its flavor and soft texture. Easy to prepare, this gingerbread will delight young and old during winter celebrations.

Preheat the oven to 160°C (320°F) and prepare a cake tin by greasing it or covering it with baking paper.

In a saucepan, gently heat the honey with the milk until the honey is melted.

In a large bowl, mix the flour, yeast, sugar, spices and salt.

Add the milk and honey mixture, as well as the egg, and mix until you obtain a homogeneous dough.

Pour the dough into the mold and bake for around 45 minutes. Check the cooking with a knife: the blade should come out dry.

Leave to cool before unmolding and serving.
