Gajar Ka Halwa , or Indian carrot pudding, is a traditional winter dessert, particularly popular during celebrations like Christmas. This sweet and creamy dessert is prepared from grated carrots simmered in milk and ghee (butter), then garnished with dried fruits. Naturally gluten-free, this dish combines sweet and spicy flavors that evoke the warmth of the holiday season.

  1. Prepare the carrots: Wash, peel and grate the carrots using a food processor.
  2. Make sure the carrots are finely grated for a more even texture.
  3. Cooking Gajar Ka Halwa: In a large saucepan or Dutch oven, heat ghee or butter over medium heat. Add the grated carrots and fry for 5 to 7 minutes, until they begin to soften.
  4. Pour the milk into the saucepan and simmer over low heat, stirring frequently to prevent the mixture from sticking.
  5. Continue cooking until the milk is almost completely absorbed (about 20 to 30 minutes).
  6. Add the sugar and mix well. You will notice that the mixture becomes slightly runny because of the moisture released by the sugar. Keep stirring until the halwa thickens.
  7. Add the cardamom powder and mix to flavor.
  8. Topping: In a small skillet, toast the cashews, almonds and raisins in a tablespoon of ghee or butter until lightly browned.
  9. Add the dry fruits to the halwa and mix well.
  10. Finishing: Remove the halwa from the heat and let it rest for a few minutes.
  11. Serve hot, garnished with crushed pistachios and a pinch of saffron, if desired.

Note

Gajar Ka Halwa can be served hot or cold.
