Gajar Ka Halwa , or Indian carrot pudding, is a traditional winter dessert, especially popular during celebrations like Christmas. This smooth and creamy dessert is made from grated carrots simmered in milk and ghee (butter), then topped with dried fruit. Naturally gluten-free, this dish combines sweet and spicy flavors that evoke the warmth of the holiday season.

Prepare the carrots: Wash, peel and grate the carrots using a food processor.

Make sure the carrots are finely grated for a more even texture.

Cooking Gajar Ka Halwa: In a large saucepan or Dutch oven, heat the ghee or butter over medium heat. Add the grated carrots and stir-fry for 5 to 7 minutes, until they begin to soften.

Pour the milk into the saucepan and simmer over low heat, stirring frequently to prevent the mixture from sticking.

Continue cooking until the milk is almost completely absorbed (approximately 20 to 30 minutes).

Stir in the sugar and mix well. You'll notice the mixture becomes slightly runny due to the moisture released by the sugar. Continue stirring until the halwa thickens.

Add the cardamom powder and mix to flavor.

Topping: In a small pan, toast the cashews, almonds and raisins in a tablespoon of ghee or butter until lightly golden.

Incorporate the dried fruit into the halwa and mix well.

Finishing: Remove the halwa from the heat and let it rest for a few minutes.

Serve hot, garnished with crushed pistachios and a pinch of saffron, if desired.
Note
