Sweet and fragrant, the fougasse of Aigues-Mortes is a traditional Camargue brioche, sweet and fragrant with orange blossom. We discovered it during a weekend with friends in this superb city. I did not eat it but it was devoured in no time. Traditionally tasted at Christmas, this local specialty is now appreciated all year round, both by tourists and the locals. So barely getting home, I decided to recreate it, in gluten -free version: no reason I deprive myself! Finally, it retains all its charm and authenticity, but like any brioche, you need a good dose of patience. The fougasse is perfect for breakfast, for dessert or snack but above all can be enjoyed the same day to keep its soft side. Its oval or rectangular shape recall the artisanal origins of this brioche bread like no other. Easy to prepare at home, she will enchant everyone. Here is the recipe that will allow you to find the flavors of the South, without compromise on your gluten -free diet.

Mix the yeast in lukewarm milk and let stand for 10 min.

In a bowl, mix the flour, sugar, salt, eggs, melted butter and orange blossom.

Add the yeast-Fais mixture and knead until a flexible (sticky but homogeneous) paste is obtained. Add flour if necessary.

Cover and let rise 1h30 in a lukewarm place.

Spread the dough in oval or rectangular shape on a baking sheet covered with parchment paper. Leave to rise for another 30 to 45 minutes.

Preheat the oven to 180°C.

Make a few shallow holes on the dough with your fingers. Place small pieces of butter in the holes and sprinkle with sugar.

Cook for 10 minutes, then brush with a brush with the melted butter/orange blossom mixture. Return to the oven for another 10 minutes or until the fougasse is golden brown.
