Make the marinade: In a large bowl, combine the coconut vinegar or rice vinegar, gluten-free soy sauce, minced garlic, bay leaves and peppercorns. Add the pork pieces, mix well, and leave to marinate for at least 30 minutes, or ideally an hour to intensify the flavors.

Sear the pork: Heat the oil in a large skillet or wok over medium heat. Lightly drain the pork pieces from the marinade (reserve the latter for later) and brown them in the pan until browned on all sides.

Cooking the adobo: Once the pork is nicely browned, pour the reserved marinade into the pan. Also add the water and mix. Cover and simmer over low heat for about 40 to 50 minutes, until the pork is tender. Stir occasionally to prevent the meat from sticking to the bottom.

Flavor adjustment: If you prefer, you can add the coconut sugar at the end of cooking and mix well. Leave to simmer for a few more minutes until the sauce has reduced and thickened to your liking.
