Sõrnikud (or Syrniki in Russian) are small pancakes made with fresh cheese, very popular in Estonia and Eastern European countries. Made with Kohupiim ( which can be substituted with ricotta or cottage cheese), they are slightly sweet and often served with sour cream, jam, or fresh fruit.

For 8 small pancakes:

To prepare the dough: In a large bowl, combine the kohlrabi, egg, sugar, vanilla extract, and a pinch of salt. Gradually stir in the rice flour until you have a slightly thick dough. Add the caraway seeds if desired.

To cook the Sõrnikud: Heat a little vegetable oil in a crepe pan over medium heat. Drop a large spoonful of batter into the pan and flatten it slightly. Cook the Sõrnikud for about 2 to 3 minutes on each side, until golden brown and slightly crispy on the outside.

Serving: Serve the Sõrnikud warm, sprinkled with icing sugar or accompanied by fresh cream, jam, honey or fresh fruit.
Note
Fruits : Add raisins or apple pieces to the dough for added texture and flavor.
Sugar-free : You can also make a savory version of Sõrnikud by omitting the sugar and adding herbs like chives or parsley.
