Its quick preparation and vibrant flavor make it a staple of Chinese celebrations, but it can also be prepared at home for any occasion. This recipe is naturally gluten-free if you use the appropriate soy sauce.

1. Prepare the shrimp
- If the shrimp are frozen, defrost them beforehand and pat them dry with paper towels.
- Remove the dorsal vein if necessary.

2. Prepare the sauce
In a small bowl, combine the tamari sauce, rice vinegar, honey or brown sugar, and white pepper. Set aside.

3- Cooking the shrimp
- Heat the oil in a wok or large frying pan over medium-high heat.
- Add the garlic and ginger and fry until fragrant, about 1 minute.
- Add the shrimp and stir-fry for 2 to 3 minutes, until they turn pink and opaque.
- Pour the sauce over the shrimp and mix well to coat them. Cook for another 1 to 2 minutes so the sauce reduces slightly.

- Remove the shrimp from the heat and sprinkle with chopped green onions.
- If desired, add toasted sesame seeds and serve with lemon slices.
