Preparing the apples: Wash and dry the apples well. Insert a wooden stick into the center of each apple. Place them on lightly greased parchment paper.

Preparation of the caramel: In a saucepan, combine the sugar, water and corn syrup. Bring to a boil over medium heat, stirring until the sugar is dissolved. Boil without stirring until the caramel reaches 150°C, about 8 to 12 minutes (use a kitchen thermometer).

Coloring and coating: Remove the pan from the heat and add the food coloring. Mix quickly. Immediately dip the apples one by one into the caramel, turning to coat. Let them harden on the parchment paper.
