Bulgogi , a traditional dish from South Korea . It literally means “fire meat”, combining thin slices of beef marinated in a mixture of gluten-free soy sauce, sugar, sesame and garlic. The meat is then grilled or sautéed at a high temperature, allowing the sweet and savory flavors to mingle perfectly. Simple to prepare and yet interesting in taste, Bulgogi is often served with rice and vegetables, such as Bibimbap , making a complete meal.

Prepare the marinade: In a bowl, combine the gluten-free soy sauce, sugar, sesame oil, garlic, grated pear, sesame seeds, mirin (if using), and a pinch of black pepper .

Marinate the beef: Add the thin slices of beef to the marinade and marinate for at least 1 hour (ideally 3-4 hours) in the refrigerator so that the meat absorbs the flavors.

Cooking: Heat a frying pan or grill over high heat. Saute the onions in a little oil, then add the marinated beef in small portions, cooking them quickly so that they are nicely browned but still tender.

Serving: Serve hot with rice, lettuce leaves and green onions as garnish.

Bulgogi can also be cooked on a barbecue. It is also commonly served with Bibimbap .
