  10. While the rice is cooking, sauté the apple pieces in a pan with the brown sugar and a little cinnamon. Cook until the apples are tender but not mushy.
  11. Add the cooked apples and raisins to the risotto at the end of cooking, stirring gently to incorporate them well.

  14. Adjust the seasoning with salt and pepper to taste.
