Rugged potatoes

Papas arrugadas are a traditional dish from the Canary Islands, consisting of small potatoes cooked in their skins in highly salted water, often seawater. The term “arrugadas” means “wrinkled” in Spanish, referring to the wrinkled appearance the potatoes take on after cooking. Once cooked, they are drained and lightly dried to obtain a wrinkled, slightly salty skin.

Ruffled potatoes are mojo sauces (mojo verde or mojo rojo) and are a popular side dish for many meals. This dish is naturally gluten-free, as it contains only potatoes, water, and salt, making it an ideal option for those following a gluten-free diet.
