Potjekos

Potjekos (or potjiekos ) is a traditional South African dish, originating from the Dutch settlers (Boers). The term “potjekos” literally means “food from the small pot” in Afrikaans, referring to the cast iron pot in which it is cooked, called a potjie .

This stew is cooked slowly over low heat, often outdoors, on embers or a campfire. It consists of meat (usually beef, chicken, lamb, or game), vegetables such as carrots, potatoes, and cabbage, as well as broth and spices. The ingredients are layered in the pot and cooked without being stirred, which helps preserve the distinct flavors of each layer.

Potjekos is naturally gluten-free, provided that the ingredients used, such as broths and spices, do not contain gluten additives. It is prized for its slow cooking, which allows the flavors to meld harmoniously.
