Potjekos

Potjekos (or potjiekos ) is a traditional South African dish, originating from Dutch settlers (Boers) . The term “potjekos” literally means “pot food” in Afrikaans, referring to the cast iron pot in which it is cooked, called a potjie .

This stew is prepared slowly over low heat, often outdoors, over embers or a campfire. It is made from meat (usually beef, chicken, lamb or game), vegetables such as carrots, potatoes and cabbage, as well as broth and spices. Ingredients are layered in the pot and cooked without stirring, which helps maintain the distinct flavors of each layer.

Potjekos is naturally gluten-free, provided that the ingredients used, such as broths and spices, do not contain additives with gluten. It is appreciated for its slow cooking which allows the flavors to blend harmoniously.
