Okra

The Gombo, also called Okra or Ladies' Fingers , is a vegetable from Africa and widely used in the kitchens of many regions of the world, especially in Africa, the Caribbean, India and Louisiana (United States). It comes in the form of elongated green capsules, containing small edible seeds.

Gombo is appreciated for its slightly sticky texture, which thickens soups and stews, such as the famous Gumbo in Louisiana or sauces in West Africa. It is rich in fibers, vitamins C and K, and antioxidants. You can cook it in different ways: sautéed, fried, simmered in sauces, or added to soups.

It is one of the traditional dishes in recipes such as Gombo sauce in Cameroon or the Gumbo .
