Okra, also known as gumbo or lady's fingers , is a vegetable native to Africa and widely used in the cuisines of many parts of the world, including Africa, the Caribbean, India, and Louisiana (USA). It consists of elongated green pods containing small, edible seeds.

Okra is prized for its slightly slimy texture, which thickens soups and stews, such as the famous gumbo in Louisiana or sauces in West Africa. It is rich in fiber, vitamins C and K, and antioxidants. It can be cooked in a variety of ways: sautéed, fried, simmered in sauces, or added to soups.
