Mojo sauce , also popular in Cuba and parts of Latin America. There are several variations, the two main ones being mojo verde (green sauce) and mojo rojo (red sauce). Mojo verde is made with cilantro, parsley, garlic, olive oil, vinegar and sometimes mild green chili peppers, while mojo rojo is made with paprika, garlic, red peppers and olive oil.
Mojo a marinade or accompanying sauce for meat, fish, vegetable or potato dishes (like the famous papas arrugadas ). It is naturally gluten-free, as long as the base ingredients, like spices and vinegar, are gluten-free.
