Jaggery

Jaggery is an unrefined sugar traditionally used in India, Africa, and Southeast Asia. It is made from the sap of sugarcane or palm trees, which is heated to evaporate the water and then solidified into blocks or granules. Jaggery has a golden-brown color and a rich, caramelized flavor with hints of molasses .

Unlike refined white sugar, jaggery retains nutrients such as iron, magnesium, and potassium, making it more nutritious. It is used in a variety of sweet and savory dishes, as well as in traditional beverages. Jaggery is naturally gluten-free.
