Jaggery is an unrefined sugar traditionally used in India, Africa and Southeast Asia . It is made from the sap of sugar cane or palm trees, which is heated to evaporate the water, then solidified into blocks or pellets. Jaggery has a golden brown color and a rich, caramelized flavor, with hints of molasses.
Unlike refined white sugar, jaggery retains nutrients like iron, magnesium and potassium, making it more nutritious. It is used in a variety of sweet and savory dishes, as well as traditional drinks. Jaggery naturally gluten-free.
