Combava

The Combava, or Kaffir Lime in English, is a citrus from Southeast Asia. It is mainly used for its very fragrant zest and aromatic leaves. The fruit looks like a small lime with rough and bumpy skin. It is often used in the kitchen of the islands of the Indian Ocean (as in Reunion and Madagascar) as well as in Thai, Cambodian, and Indonesian kitchens to flavor dishes such as currys, soups, and marinades.

The taste of combava is very intense, lemony with floral and spicy notes, which makes it a prized ingredient in Asian and Creole cuisine.
