🌍 Origin: A millennia-old and resilient cereal
Fonio ( Digitaria exilis ) is considered the oldest cultivated cereal in Africa, particularly in Guinea, Senegal, and Mali. Nicknamed “the seed of the universe” by the Dogon people, it possesses incredible resilience. Capable of growing in poor soils with very little water, it is an ecologically sound crop par excellence. Its grains are tiny, almost like sand, but their potential is immense.

🍳 How to cook fonio?
Fonio is the “Formula 1” of cooking: it cooks in record time (about 3 to 5 minutes)! Its taste is delicate, with a slight nutty note.
The simple method (semolina-style):
- Rinse the fonio using a fine sieve.
- In a saucepan, put 1 volume of fonio for 2 volumes of water .
- Bring to a boil, cover and reduce heat to low.
- Allow the water to absorb (approximately 4 minutes), then turn off the heat.
- Let it swell for 2 minutes and fluff with a fork with a drizzle of olive oil or a knob of butter.
