- In Italy, people enjoy the Colomba Pasquale, a soft brioche in the shape of a dove.
- In Greece, roast lamb is king, accompanied by tsoureki, a sweet braided bread.
- In Ethiopia, tables are adorned with doro wat, a spicy chicken stew served oninjera.

Where: Japan When: March to April The Hanami tradition involves admiring cherry blossoms while enjoying a spring picnic.

💦 Songkran – A boozy and spicy New Year

- In Thailand, khao chae is a specialty of rice served in fragrant water, accompanied by salty dishes. But Pad Thai is commonly prepared.
- In Laos, they prepare laap, lap or larb, a lemony minced meat salad.
- In Cambodia, amok trei, fish in coconut milk, is a must-try.

🌾 Passover – A Passover based on unleavened bread
Where: Jewish world When: March/April Passover , or Pesach , commemorates the Exodus from Egypt. For eight days, all leavened foods are avoided.
- The Seder includes matzah (unleavened bread), bitter herbs, hard-boiled egg, and haroset (dried fruit paste).
- Many traditional recipes are naturally gluten-free!
