  1. Slice the vegetables thinly (into julienne strips).
  2. Cut the cauliflower into small florets
  3. Slice the onions
  4. Pound together the garlic, salt, ginger, chili
  5. Heat the oil and fry each vegetable separately, but don't let them soften: they will continue to cook in a large dish as they are added
  6. Heat some oil and sauté the onions for a few minutes
  7. Add the crushed mixture and then the turmeric.
  8. Mix well and pour over the vegetables.
  9. Add the vinegar (adjust the amount to your taste) and mix
  10. Allow to cool before serving
